Mexican Cornbread Casserole 

Ingredients


1 1/2 cups cornmeal

1 1/4 cups flour

1/2 cup sugar

1 tablespoon baking powder

1/2 teaspoon salt

3 large eggs

1 1/4 cups milk

1/3 cup butter

1 can creamed corn

2-3 chopped jalapeno peppers

1 cup  cheddar cheese

1 pound ground beef

1/2  onion, finely diced

Mexican Cornbread Casserole

Directions


1. Brown ground beef with onions. Discard fat.

2. Mix the dry ingredients - corn meal, flour, baking powder, sugar, and salt. Sift the baking powder through a wire mesh.

3. Add remaining ingredients and mix thoroughly.

4. Pour batter into a greased, 9-in. by 13-in. pan or dish. Bake at 350 degrees Fahrenheit for 50-60 minutes or until golden brown on top.

5. Remove from oven, and let sit for 15 minutes before serving.


Tip: Replace the ground beef with ground turkey or ground chicken.
